Eclairs & Profiteroles. Eclairs and profiteroles are the most-loved and popular French desserts. In this course, you will learn how to make the versatile choux pastry, shape and bake it. You will also learn how to make delicious fillings and coating.

Course Content

On this course you will learn:
How to make, shape and bake the choux pastry that will be used to do the eclairs and profiteroles
How to prepare pastry cream, chocolate cream and coffe fillings
Chocolate and fondant topping

Entry Requirements

To be eligible for this course you must be 19 or over on the start date of the course.

To be eligible for this course you must be 19 or over on the start date of the course. This course is for anyone with an interest in learning about chocolate truffles. Suitable for beginners to intermediate level. You will need to be able to follow the recipe sheets in class.

First Class Requirements

You will be advised on which ingredients at least one week before the class.

Additional Information

As a result of the government’s closure of schools and colleges, some of our courses will be delivered through remote learning including video conferencing, (using Skype, Zoom, Microsoft Teams) and email contact with your tutor.

If your course is indicated as an ONLINE COURSE, you will need either a PC (with a camera and microphone), laptop, tablet, smartphone and access to the internet to be able to join the lessons. Lessons will run at the published time – so be ready and set up to join in.

You will need to purchase the ingredients for the session and bring an apron, tea towel and container/s to take your food home. You will need a pen for taking notes.
Please note that some of the cookery activities will require working in pairs, sharing equipment, setting up and clearing the work area and equipment independently.
