This course will take you on a culinary journey through Provence; a region on France synonymous with sunshine and a relaxed approach to life. The six week course will highlight the best in seasonal ingredients, with a variety of dishes that can be adapted to your personal tastes and preferences. You will learn how to create versatile meals that can be served for informal family occasions, or adjusted to serve as part of a dinner party.
Course Content
You will learn some basic cooking skills and basic hygiene and health and safety principles. The following recipes will be made but could be subject to change due to tutor?s discretion and the availability of ingredients:
Week 1: Onion and anchovy tart (Pissaladiere),
Week 2: Soupe au pistou (sort of pesto), ratatouille
Week 3: Cod brandade with tapenade crust, Provencal vegetables tian
Week 4: Thyme buttered chicken breast with fennel gratin and Provencale new potatoes
Week 5: Daube Provencale (Provencal beef stew), fig gratin with almonds
Week 6: Hazelnut and pine nut tart, melon with meringue
Entry Requirements
To be eligible for this course you must be 19 or over on 31st August prior to the course start date.
This course is aimed at students of beginner to intermediate level. Confident cookery skills are beneficial but a love of cooking and preparing food is more important.
Assessment Methods
The tutor will work where possible on a one to one basis to assess your cooking skills and give advice on how to improve. You will have an Individual learning plan to record your progress and the tutor will give you a feedback on your progress. You will be taught by clear demonstrations in the group and one to one teaching.
Additional Information
You will need to bring your own ingredients and you will be provided with a list for the following week each session. The list of the first session will be provided at least 3 days before the first session.
All ingredients will be available from a standard local supermarket, or we will provide guidance about where you can source them. If you have any queries, please contact your tutor.
You will need a pen/ notebook for taking notes.
Please note that some of the cookery activities will require working in pairs, sharing equipment, setting up and clearing the work area and equipment independently.
